Ingredients (Serves 4)
1 package (400g / 14 oz) Spaghetti Pasta 2 tablespoons olive oil 2 tablespoons butter 3 cloves garlic (minced or finely chopped) 1/2 cup sundried tomatoes (oil-packed, sliced) 1.5 cups heavy cream (or cooking cream) 1 cup fresh spinach (washed and roughly chopped) 1/2 cup pasta cooking water 1/2 cup grated Parmesan cheese (plus more for serving) 1/2 teaspoon dried basil (optional) Salt and freshly ground black pepper (to taste) For boiling water: Salt

Instructions
Cook the Pasta: Bring a large pot of salted water to a boil. Cook the Spaghetti pasta according to package directions until al dente (firm to the bite). Reserve about 1 cup of the pasta water, then drain the pasta.
Prepare the Sauce: In a separate large skillet, heat the olive oil and butter over medium heat. Add the minced garlic and sauté until fragrant (about 1 minute). Immediately add the sliced sundried tomatoes and sauté for 2-3 minutes.
Add Cream: Pour the heavy cream, dried basil (if using), salt, and pepper into the skillet. Let the sauce simmer gently over low heat for 3-4 minutes.
Add Cheese and Spinach: Stir the grated Parmesan cheese into the sauce until melted. Then, add the fresh spinach and stir until the spinach wilts and shrinks down (about 1-2 minutes). Add the reserved pasta water sparingly to adjust the sauce consistency.
Combine and Serve: Add the drained Spaghetti pasta directly into the sauce. Toss well until the pasta is fully coated with the creamy sauce.
Garnish: Serve immediately while hot, topped with extra grated Parmesan cheese.
